Borleves recipe for a warming white wine soup, the festive flavours will get you in the holiday spirit, and it is an excellent starter on Christmas day.
Ingredients

500ml sweet white wine

150ml water
-
100g sugar
-
2 cinnamon sticks
-
8-10 cloves
-
5 egg yolks
-
grated peel of one orange
-
handful of raisins
-
whipped cream
Directions
Mix 400ml of the sweet wine in a saucepan with sugar and water, then add the cinnamon and cloves. Bring to a boil, then let it cool.
In a separate saucepan, beat the egg yolks with the remaining wine.
Slowly add the lukewarm soup to the egg mixture, heating and stirring constantly. Cook on low until the soup begins to thicken.
Serve warm with whipped cream and a handful of raisins.
