Verjus blanc from fresh white grapes grown in Tokaj. This is a versatile ingredient with a delicate acidity, intense herbal aroma and a rich fruit flavour.
Verjus, meaning green juice, is a non-alcoholic ingredient crafted by gently pressing unripe grapes. Its natural tartness and layered flavour profile, reflecting the complex volcanic terroir, makes it a great mixer for cocktails and for preparing cordials. An alternative to vinegar in recipes, you can add it to salad dressings and marinades, or use it instead of lemon with smoked salmon and grilled fish.
Meet the Winemaker
Gróf Degenfeld Winery, Tokaj - Protected Designation of Origin (PDO)
In 1994 the Count Degenfeld family successfully revived its wine estate in the heart of the Tokaj wine region, ensuring that over 150-year-old tradition lives on with the latest generation. Winemaking was closely intertwined with the family’s deep love and respect for nature; therefore, they have cultivated their vineyards organically since 2009. The family only work with native grapes best suited to the unique micro-climate, creating a range of single varietal wines with award-winning credentials. The bunches are hand-harvested and carefully vinified with minimal intervention. As a result, you are tasting an authentic drop of the volcanic Tokaj terroir with every sip you take.
