Organic hulled proso millet is a gluten-free ancient grain. Golden yellow with a mild natural sweetness, this is a healthy and versatile ingredient.
Organic millet grains can be turned into a gluten-free side dish similar to couscous, or add it to thicken soups, stews or casseroles. You can also use it for baking bread, muffins and cookies, or prepare a warming porridge.
The millet grains have a higher-than-average protein and fibre content, and they are an excellent source of vitamins and minerals including calcium, magnesium and iron.

Cooking recommendation:
Rinse the millet in cold water. Toast the raw millet over medium heat in a saucepan stirring continuously until the grains turn lightly golden (be careful not to let them burn). Place in a saucepan with three times as much water as millet, then bring to a boil, cover and simmer gently for 15-20 minutes until tender and fluffy.
