Gombaleves - Hungarian Mushroom Soup

Gombaleves recipe for making a creamy Hungarian mushroom soup. Add traditional csipetke noodles to turn this warming vegetarian dish into a hearty meal.
Ingredients

500g chestnut mushroom

250ml sour cream
-
100g csipetke pasta

1 medium brown onion

1 vegetable stock pot

1l cold water
-
vegetable oil
-
ground white pepper

salt
-
fresh parsley
Directions
Thoroughly wash and clean the mushroom, then cut into pieces.
Heat the oil in a saucepan and add the finely diced onion, stirring continuously until translucent.
Add the chopped mushroom and simmer covered for a couple of minutes. Season with salt and pepper to taste, add the vegetable stock pot and 1l of cold water, then boil and cook on low heat for 10 minutes.
Add the csipetke and cook for around 8-10 minutes.
Finally, add the sour cream and stir it in thoroughly for a creamy texture. Serve with some freshly chopped parsley.
