An easy gnocchi recipe from sweet potato flour, this gluten-free pasta is a healthy vegetarian side dish or a delicious main served with grated cheese.
Sweet potatoes are naturally rich in Vitamins and minerals and are an excellent source of gut-health-promoting fibre. Their slightly sweet taste makes them a great alternative to regular white potatoes.
Ingredients

300g sweet potato

250g sweet potato flour

1 egg yolk

pinch of salt

black pepper

1/2 tsp turmeric
Directions
Peel and cube the sweet potato, then cook in salted water for around 30 minutes, until it becomes soft and tender. Drain the water and let it stand. In a bowl, mash once it has cooled down, then add the sweet potato flour, egg yolks, salt, pepper and turmeric. Knead thoroughly by hand until a homogeneous mixture is achieved.
- Cut small amounts of dough to form ropes and cut into 2 cm pieces, then slide each piece on the back of a fork to add the characteristic ridges.
- Cook the gnocchi in a large pot of salted boiling water. Once they float to the top, you will know that they are ready.
